Vegertarian Meat Balls
1/2 lb walnuts
3 eggs
1/2 or 1cup Quality parm cheese (depending on taste)
Seasoned bread crumbs
1 onion
2 cloves garlic
In food processor add grind walnuts very fine (be careful not to grind into a paste) add onion and garlic and grind again. Add 3 eggs and enough breadcrumbs to make it into a meat ball like consistancy. Sometimes I add a little milk if to dry. You should be able to form into teaspoon size balls and fry on each side in olive oil or canola oil until brown.
Have a pot of spaghetti sauce ready and just dump hot meatballs into hot sauce and simmer for 15 minutes just for flavor .

Asian Cabbage Salad
1 head shreaded cabbage (any type you like)
1/2 cup slivered almonds
1 cup diced scallions
1 package Original Ramin Noodles
White vinegar
Olive Oil
Shread cabbage, chop scalions add in bowl break up and toast ramin noodles with slivered almonds in broiler. Make salad dressing 1 part oil 3 parts vinegar. Add season packet of ramin noodles to dressing. Shake and pour over cabbage. Yum!

Pea Salad
1 pkg Steam Fresh peas (these are the best but you can use any frozen peas)
1 small chopped onion
2 diced tomatoes
salt, pepper
Mayo to taste.
This is simple, just mix and eat.Tastes better the next day!
